Local Specialty, pheasant dishes
|
Specialty dishes using pheasant meat have been studied and developed in Tsuchiyu-Onsen Hot Spring.
Pheasant meat has been treated as noble food and presented to the imperial family from old times.
Even today, Kiji-zake (grilled pheasant in hot rice wine) appears as part of the New Year dishes at the Imperial Court.
Pheasant meat is good for health and beauty.
It is lean and contains 18 amino acids including the essential amino acids out of 23 amino acids necessary for humans.
Since pheasants hatch only once a year, it was not possible to serve pheasant dishes year-round.
However, Hiromi Town, Ehime prefecture, which started the production of pheasant meat as part of the vitalization project of the town,
succeeded in keeping the quality of pheasant meat for a long time while eliminating drip loss when thawed, using the rapid liquid freezing technology.
Furthermore, the breakthrough maturing process that stops bacteria from growing makes the quality of their pheasant meat excellent. Tsuchimi-Onsen Hot Spring signed an agreement to have a sister area relationship with Hiromi Town for town revitalization, and became able to serve pheasant dishes as the local specialty.
